Tortilla Wrap With Bean & Salsa Filling

Tortilla Wrap With Bean & Salsa Filling

Makes 8

If you cannot buy refried beans use kidney beans coarsely mashed.
8 large soft flour tortillas
400g/14oz can refried beans
4 spring onions shredded
¼ cucumber sliced
½ avocado chopped
8 iceberg lettuce leaves

SALSA: mix the following ingredients
225/8oz tomatoes, skinned & chopped
¼ red onion finely chopped
15g/1/2 oz fresh coriander chopped
Preheat oven 190/375/Gas 5
Wrap tortillas in foil and warm for 5-10 mins

Mix together the beans, spring onions, cucumber, avocado and salsa.
Place shredded lettuce on each tortilla. Top with the bean/salsa mixture,
fold up the tortilla and serve.
